SAVOURY BEANS with Bean Supreme Rosemary & Parsley Sausages

  • 2 Tsp Olive oil
  • 4 garlic cloves, finely chopped
  • 1 onion – finely diced
  • 1 coriander – ground
  • 1 tsp smoked paprika
  • ½ tsp fennel seeds
  • ¼ tsp dried chilli flakes
  • ¼ tsp allspice
  • 400g tinned chopped tomatoes
  • 200ml water
  • 400g tin Borlotti beans – drained and rinsed
  • 1 Tbsp Dijon mustard
  • 2½ Tbsp maple syrup
  • 1 tsp Worchester sauce
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 x packet Bean Supreme Rosemary & Parsley Sausages – cooked
  • Crusty warm bread (optional)

methodMETHOD

  1. In a medium pot over medium high heat add olive oil. Add onion and garlic and fry until starting to brown and soften.
  2. Add coriander, smoked paprika, fennel seeds, chilli and allspice and lightly fry for a minute.
  3. Add the tomatoes, water, beans, Dijon mustard, maple syrup and Worchester sauce. Bring to the boil then reduce to a simmer. Cook for 10 minutes until beans become thick and saucy. Add salt and pepper to taste and serve with cooked Bean Supreme Rosemary and Parsley Sausages and warm bread.
