Soft Tofu and Granola Breakfast

Orange Dust

  • Orange peel
  • Icing sugar

Mango Flavoured Tofu

  • 200g Bean Supreme Soft Tofu
  • 200g Mango pieces – frozen
  • 100g Coconut cream
  • 2 Tbsp Honey

Mango and Raspberry Tofu mix

  • 200g Bean Supreme Soft Tofu
  • 200g Mango pieces – frozen
  • 100g Raspberries – frozen
  • 100g Coconut cream
  • 2 Tbsp Honey

Granola / Muesli

  • Use a quality toasted granola or muesli mix with whole nuts and seeds.

methodMETHOD

  1. Peel the orange skin without pith and bake at 100°C for 1 hour or until the orange has dried completely with a slight colouring. Once cold, use a spice blender to blend into a fine dust mixed with the icing sugar.
  2. For each flavoured tofu mix, add ingredients to a blender and mix till fine.
  3. For serving arrange in layers with 2/3 of flavoured tofu to 1/3 of granola or muesli.
